Amy's Attic or what's in my head today...

I was told I should start a blog. I'm not sure what I have to say is of interest to anyone other than myself; however, I'm all game for trying new things in my fortieth year of life. This has been a year of changes in my family. My oldest daughter graduated from high school, we moved to a new school district for my son and my mother moved back to Texas from Mississippi. Hallelujah! There are many more happenings that make this year a special year to me, but I'll discuss those more in depth later.
Recently, my husband went to a nutritionist. He has VERY high cholesterol which is hereditary and he opposes prescribed medication STRONGLY! So, he decided to take his health into his own hands. It's been a great thing BUT it has greatly challenged me and my history with food. My daughter has recently gone to the nutritionist as well and discovered she shares her father's genes. I am on board wholeheartedly and am trying to educate myself on how I need to cook for my family. No more Hamburger Helper for this family! No more Taco Casa! No more Whataburger! NO MORE BEEF!!!! This flies in the face of all I learned as a child and then as a young wife and mother. I was raised on beef...it was "what's for dinner".
I've had many successes at preparing new dishes and many failures! I have never followed recipes. I prefer to CREATE! Sometimes, that doesn't work out. For example, my husband is NOT a fan of poached chicken. My daughter is NOT a fan of salmon prepared in any way whatsoever. They do both love a stir fry of any kind and this allows me to create freely. Many of the foods I now need to incorporate in our diet escape my creativity. I had never eaten or prepared couscous or quinoa. I had never roasted a butternut squash. I've never used anything but whole milk and white flour. This leads me to say I've now learned to use recipes and put my own special touch on them. I can still feel creative, but there's also a greater chance my family will actually eat what I've prepared.
I spent several hours yesterday looking for recipes for a Thanksgiving meal that our whole immediate and extended family will enjoy. It was overwhelming at first but became a little like a scavenger hunt. I ended up with a menu I can feel good about serving to all my guests on Thursday. Of course I spent WAY more at the stores I went to yesterday, but it's an expense that I feel good about. If I can improve the health and happiness of my family through the meals I prepare...that really IS priceless. Happy Thanksgiving to all!
